Vanilla Flax Milk

Ingredients:

  • 2-4 tablespoon vanilla extract
  • 1/2 cup ground flax seed
  • 1/2 cup coconut flakes
  • 1/4 cup coconut palm sugar
  • 6-7 cups of water

Procedure:

1) Boil 4 cups of water.

2) Pour the boiled, hot water in a bowl or large cup with the vanilla extract, flax seeds and coconut flakes ( water should get more viscous and sticky).

3) After the mixture and water is cool, put the mixture and water in a vitamix or blender.

4) Blend on high for about 1-2 minutes.

5) If the blender left pieces of coconut and flax and the milk is not silky smooth, use a cheesecloth to sift out the pieces (if not, leave the milk in the blender).

6) Blend the milk and coconut palm sugar until smooth.

7) If the milk is too thick for you liking, stir in a few cups of water.

8) Enjoy with coffee, tea or simply drink on its own (my favorite way).

Maple Vanilla Caramel Cookies

Maple Vanilla Caramel Cookies

 

 

 

 

 

 

Salty and sweet, my vanilla and maple flavored cookies have strong undertones of caramelized sugar.  My dense and buttery cookies pair well with milk and will melt in your mouth. Makes about 25 cookies.

Ingredients:

  • 1 cup coconut flour
  • 6 tablespoons coconut butter
  • 4 tablespoons vanilla extract
  • 7 tablespoons raw honey
  • 7 tablespoons maple syrup
  • 3 medium organic eggs beaten
  • 8 tablespoons almond butter
  • pinch of sea salt
  • 1/2 cup almond flour (optional-for less sweet and more granular cookie)

Procedure:

1) Preheat oven to 350 degrees F and line a baking pan with parchment paper.

2) Mix all the ingredients together. Mix well to a dough.

3) Scoop the dough one tablespoon at a time, form into balls and place on the pan.

4) Bake for 15-20 minutes or until lightly golden and a little more firm.

5) Turn of the oven and let cool for half an hour.

6) Serve or chill in refrigerator and then, serve (we like to put in fridge as taste chewier and sweeter).
