Garlic and Saffron Mashed Cauliflower “Potatoes”

Ingredients:

  • 1/8-1/4 cup extra virgin olive oil
  • 1 tsp sea salt
  • 1/2-1  tsp black pepper
  • 1 tsp saffron
  • 1 head of garlic roasted
  • 1 medium cauliflower (chopped and steamed)
Procedure:
  1. In a mixing bowl, combine all the ingredients.
  2. Mash to a chunky puree and enjoy.
