Not So Traditional (Faux) Potato Salad









  • 1 cauliflower steamed
  • 1/4 cup extra virgin olive oil or flavored/infused oil
  • 2 tablespoons
  • 4-8 tablespoons minced chives
  • sea salt and black pepper to taste


1) Chop steamed cauliflower into bite size pieces and add to a bowl.

2) Mix in the oil, apple cider vinegar and minced chives.

3) Add salt and black pepper to taste and serve.
